Lobster Newburg
This recipe is a huge hit with everyone in my family, but I don't make it
very often because it is so rich and calorie laden.I think of it as "heart attack on a plate", so it is made as a rare treat.
5 Egg yolks
1 1/4 C. Heavy Cream
1/2 C. Butter
1/4 C. and 1 Tbls. Dry sherry
1 1/4 Tsp. Salt
2 1/2 Pinches cayenne pepper
2 1/2 Pinches ground nutmeg
2# Cooked lobster meat, chunked
In a small bowl, whisk together egg yolks and heavy cream until well blended. Set aside. Melt butter in a saucepan over low heat. Stir in the egg yolk mixture and sherry. Cook, stirring constantly until the mixture thickens. DO NOT BOIL!
Remove from heat, and season with salt, cayenne and nutmeg. Add lobster. Return pan to low heat and cook gently until heated through. Some people like to serve this over slices of buttered toast, but my family likes it served over fettuccini!
