On The Menu At The Mug Up Cafe


Chocolate Lovers Cake

If you are a real chocolate fiend, this is the cake for you!

3C. Packed brown sugar
1C. Butter, softened
4 Eggs
2 Tsp. Vanilla extract
2 2/3 C. All-purpose flour
3/4C. Baking cocoa
1 Tbls. Baking soda
1/2 Tsp. Salt
1 1/3 C. Sour cream
1 1/3 C. Boiling water

Frosting:
1/2 C. Butter
3 (1 ounce) Squares unsweetened chocolate
5 C. Confectioners' sugar
1 C. Sour cream
2 tsp. Vanilla extract

In a mixing bowl, cream together brown sugar and butter. Add eggs, one at a time, beating well after each addition. Beat on high speed until light and fluffy. Blend in vanilla. Combine the other dry ingredients and add alternately with sour cream to creamed mixture. Mix on low just until combined. Stir in water until blended. Pour into three greased 9" round baking pans and bake at 350 degrees F for 35 minutes. Cool in pans for about 10 minutes; remove to wire racks to cool completely. For frosting, in a medium saucepan, melt butter and chocolate over low heat. Cool several minutes. In a mixing bowl, combine confectioners' sugar, sour cream and vanilla. Add chocolate mixture and beat until smooth. Frost cooled cake.

  2. I am making this cake today. Laura is insisting on making me a birthday cake, so this is the one. On the sour cream, is that 1 1/3 cups? Thanks!
